Seafood Salad
Ingredients:
2 oz (57 g) freshly cooked or canned crabmeat, drained
2 oz (57 g) freshly cooked or canned shrimps, drained
A few cooked scallops, drained
1 large, unpeeled red apple, diced
1 medium size red pepper, cut into pieces
1/2 tsp lemon juice
4 slices lemon
lettuce leaves
fresh parsley
Curry sauce
3 TBSP light sour cream
2 TBSP light mayonnaise
1/8 tsp curry powder
1 tsp chopped green onion
Preparation:
In a bowl, mix together curry ingredients. Add all of the ingredients, mix together and refrigerate until ready to serve.
