This certified organic wine is made from 100% Chardonnay, sourced from a single lieu-dit located at the highest point of Santenay. At an altitude of over 300 meters, the vineyard benefits from a cool climate and a chalky, well-draining terroir that imparts a distinct minerality to the wine. The vines are more than 40 years old, contributing depth and complexity. Fermentation takes place with indigenous yeasts, allowing the wine to express its natural character. The wine is aged in a blend of 50% barrique (12% of which is new) and 50% large, older foudres, providing a harmonious balance of oak influence and freshness. After aging, it is finished in stainless steel for six months, ensuring a crisp, refined finish before bottling
